Recipe: Avocado Chickpea Salad

The weather in San Francisco the past few weeks has been absolutely ideal and reminded me so much of being back home in southern California. When the weather is warm, I find myself craving fresh and light meals. This salad is has all of my favorite ingredients!


Avocado Chickpea Salad

Serves 2

Ingredients
2 cups shredded romaine lettuce
1 ripe avocado, cubed
1 cup chickpeas, drained and rinsed
½ cup cooked brown rice (optional)

Dressing
2 tbsp lemon juice
1 tbsp olive oil
2 tsp honey
pinch salt & pepper

Instructions
In a large bowl, toss together shredded lettuce, avocado, chickpeas, and cooked rice (optional).
In a separate small bowl, whisk together dressing ingredients.
Pour over the salad and toss until salad is coated.
