Recipe: Smoked Herring Potato Salad

As I continue to cook for myself more often, I've come to appreciate the convenience of canned fish. Trader Joe's has a variety of canned fish options and I'm slowly becoming more adventurous by branching out from the standard canned tuna and salmon. Fully cooked, canned fish is cost effective, nutritious, and perfect for when I crave fish but don't want to buy a large portion. On my last grocery store trip, I went for the smoked herring fillets. After some thought as to what to use it for, a potato salad came to mind. This recipe can be adapted to whatever vegetables you have on hand. I chose to add cucumber and tomato for added crunch.


Smoked Herring Potato Salad
Adapted from Chocolate & Zucchini
Serves 3-4

Ingredients
2 medium potatoes, scrubbed and cut into 1-inch cubes
1 small onion, finely diced and soaked in cold water (red onion would be an excellent alternative)
¼ cup cucumber, deseeded and diced
¼ cup tomato, diced
¼ tsp sea salt
1 tbsp dijon mustard
1 tsp lemon juice
2 tbsp olive oil
1 can (6.7 oz ) Trader Joe's smoked herring, drained and cut into bite-size pieces

Instructions
Place the potato cubes in a pot of unsalted water.
Cover, bring to boil, and cook for 10 minutes, or until cooked through and tender.
Drain and let rest to cool.
In a medium salad bowl, combine the onion, cucumber, tomato, salt, mustard, and lemon juice.
Whisk the olive oil into the bowl. Add the potatoes and herring and toss gently to coat.
Serve immediately for a warm salad or store in the fridge to be eaten cold.
